Shinok: honey and apple august


Shinok’s chef Elena Nikiforova has added new honey and apple dishes to the restaurant’s menu. They will be available throughout August as two East Slavic religious festivals – Savior of the Honey Feast Day and Savior of the Apple Feast Day – fall on this month. Numerous folk rituals including culinary traditions are linked to these events. It is commonly believed that you are bound to taste newly harvested apples and honey at this time.
We would particularly advise you to sample green salad with slices of oven-baked turkey roll stuffed with apples, and roasted duck – duck legs braised with cornel, dried cranberry, apples and spices complemented by marinated apple carpaccio.
Since you have reached desserts, it would be impossible to avoid temptation and not to try ‘The Paradise Apple’. These are white chocolate capsules filled with apple cream with cinnamon and lemon, served with a scoop of ice-cream, green basil sauce, apple slices and meringue.
Among the other sweet treats are apple charlottes, baked pies stuffed with apples and cinnamon, medovik (honey cake), poppy seed roll with honey, and pancakes with poppy seed. Honey is among the ingredients of all these dishes.
